Fruit brandy

Fruit brandy is a spirit made from various fruits such as apple, quince and mirabelle plum. After the fruit harvest, the fruits are filled into a tank and this mash ferments at a constant temperature (18° C) to preserve the aromas. The mash is then heated in steam boilers. This first distillation produces the raw brandy. After a second distillation process, the fine brandy is obtained. The fine brandies are first stored for a few months to up to several years. They are reduced to drinking strength with spring water before bottling.
