Armagnac is a brandy from the Gascogne in the southwest of France. Distilled twice in a column still, it is a strong brandy, which becomes very soft and aromatic due to the long ageing in wooden barrels. An Armagnac is stored for a very long time in wooden barrels. 30, 50 or even 60 years are not unusual.
The vintage Armagnacs are usually only bottled when we order the bottles. If I order today some 1951 Armagnac, it takes a few days before they it is bottled. Thus, it is possible that the Armagnac continues to ripen until my order and develops constantly as far as aromas and softness is concerned.
